Mountain vacation

Back in May, Mr and I went on vacation to the mountains. We are lucky to have a house at our disposal where we can bring our pets, and we headed out there for a whole week! Despite the non-stop rain and cloudiness, we had a great time. Being members of the current century, this is the way we roll on vacation:

As usual, our time in the mountains centered mostly around food. The first morning there I whipped up our favorite breakfast, cream cheese stuffed french toast. This is a brilliant and delicious version of french toast which we were introduced to a long time ago when visiting some friends in Salt Lake City. Start with a loaf of French bread and cut some slices about an inch thick.

Next, cut a hole through the bottom and up into the slice.

Stuff the cream cheese into each slice of bread.

Cook as normal french toast, dredging it through the eggy mixture. Add some syrup and bacon for breakfast heaven. These pictures are making me drool.

As I mentioned, we brought the pets along with us. Here's a sampling of their cuteness:

Toward the end of the trip we decided we would not be held hostage by the yucky weather any longer and ventured out for a picnic and a drive. First, we hit up the Great Smoky Mountains National Park, where we got to see an elk up close, then we looped around on the Blue Ridge Parkway back home.

Most of the drive on the Parkway was encased in fog, and the music gods knew it!

Our last morning in the house the sun came out, and the garden looked beautiful.

Other activities included watching many movies and reading. It was quite a relaxing vacation, and we are glad we spent the time there this spring. As usual, Miss Mope hated the car ride home.

  1. What fun to read about your trip. I could see the fog and remember some forays down roads in the mountain roads that were tricky. Glad you had a good time and shared it!
